It has to be cocktail hour somewhere!

Its got to be cocktail hour somewhere in the world! Here are a couple of my favorite “Happy Returns” cocktails in Barbados
Rum Punch
“One of Sour, two of Sweet, three of Strong and four of Weak” is a rhyme I am told Barbadians use to mix a rum punch.
1 part freshly squeezed lime juice
2 parts sugar cane syrup
3 parts Barbadian Rum the older the better
4 parts water passion fruit juice or half and half
2-3 dashes bitters grated nutmeg and a slice of lemon
Make by the glass or the pitcher use ounces or cups for “parts”
Pour the lime juice and sugar cane syrup into a vessel of your choice
Add rum and water (or passion fruit juice) stir again and finish with a few dashes of bitters and grated nutmeg.
Garnish with a lemon and Enjoy!
Rum Mule
In the bottom of a cocktail shaker, muddle a 1-2 inch thick round of ginger
Add 2 ounces of Rum (Barbadian) 1 oz fresh lime juice
3/4 ounces of Demerara sugar syrup,
Shake in ice until well chilled.
Double strain (through a fine mesh strainer as well as shakers own strainer)
into a tall glass with fresh ice
Top with about 1oz of ginger beer garnish with lime slice and ginger slice.
